Valentine’s Recipe: Wine-Poached Figs Over Ricotta
This decadent dessert is simple to prepare, so you can spend your time enjoying your romantic evening instead of being stuck in the kitchen.
Ingredients:
· ½ cup dried figs, cut into quarters
· ¼ cup sweet wine – marsala, port, or sherry
· 2 tsp honey
· ½ cup low-fat or part-skim ricotta
· 1/8 tsp vanilla
· 1 tsp sugar or agave nectar
· 1 Tbsp roasted, slivered almonds (optional)
Directions:
1. Combine figs, wine, and honey in a small saucepan. Slowly bring to a boil, stirring as needed. Reduce heat and simmer until the figs soften and the wine reduces to a syrupy texture.
2. Stir together the ricotta, sugar or agave nectar, and vanilla. Divide it between 2 dessert dishes and top with the warm fig mixture. Garnish with almonds, if desired.
