Recipe: Shrimp Avocado Mango Salad Over Arugula


Ingredients:

  • 1 pound shrimp, peeled and deveined
  • Pinch sea salt
  • ½ tsp. chili powder
  • 1 tbsp. extra virgin olive oil
  • ½ red pepper, diced
  • 2 shoots scallions, sliced
  • 3 tbsp. fresh cilantro
  • 1 ripe avocado, cubed
  • 1 c. mango, chopped
  • 1 c. grape or cherry tomatoes, halved
  • 1 tbsp. lime juice
  • 4 c. arugula

Directions:

  • Rinse shrimp and pat dry. Sprinkle shrimp with salt and chili powder. Heat ½ tbsp. of the olive oil in a skillet on medium heat. Carefully place shrimp in a pan and sear on each side for about 2 minutes until cooked through. Remove from heat and set aside to cool.
  • Combine all vegetables, avocado and mango in a serving bowl and toss with remaining olive oil and lime juice. Gently fold in shrimp and serve over arugula sprinkled with a little extra virgin olive oil. Enjoy!
