Recipe: Shrimp Avocado Mango Salad Over Arugula
Ingredients:
- 1 pound shrimp, peeled and deveined
- Pinch sea salt
- ½ tsp. chili powder
- 1 tbsp. extra virgin olive oil
- ½ red pepper, diced
- 2 shoots scallions, sliced
- 3 tbsp. fresh cilantro
- 1 ripe avocado, cubed
- 1 c. mango, chopped
- 1 c. grape or cherry tomatoes, halved
- 1 tbsp. lime juice
- 4 c. arugula
Directions:
- Rinse shrimp and pat dry. Sprinkle shrimp with salt and chili powder. Heat ½ tbsp. of the olive oil in a skillet on medium heat. Carefully place shrimp in a pan and sear on each side for about 2 minutes until cooked through. Remove from heat and set aside to cool.
- Combine all vegetables, avocado and mango in a serving bowl and toss with remaining olive oil and lime juice. Gently fold in shrimp and serve over arugula sprinkled with a little extra virgin olive oil. Enjoy!
