Recipe: Slow Cooker Cauliflower Chicken Chili


Here’s a lower-carb twist on traditional chili. Swap out beans for cauliflower (a nonstarchy veggie) to enjoy the comfort of chili with fewer carbs.

Ingredients:

  • 6 chicken thighs (about 1 lb), boneless, skinless, cut in 1- to 2-in pieces
  • 1 red bell pepper, washed and dried, seeds removed, roughly chopped (about ¾ cup)
  • 1 green bell pepper, washed and dried, seeds removed, roughly chopped (about ¾ cup)
  • 1 red or white onion, peeled, roughly chopped (about ¾ cup)
  • ½ head cauliflower, washed and dried, roughly chopped (about 4 cups)
  • 2 garlic cloves, peeled, minced
  • 1 can (28 oz) no-salt-added tomato puree
  • ½ cup low- or reduced-sodium chicken broth
  • 2 Tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp black pepper
  • ¼ tsp kosher salt
  • Crushed red pepper flakes, to taste

Optional toppings:

  • 1 avocado, pit removed, peeled, thinly sliced or cut into cubes
  • 1 lime cut into wedges (to squeeze over finished dish)
  • 1 bunch of fresh cilantro or parsley washed and dried, chopped

Directions:

  1. Place all ingredients into the slow cooker and stir to mix.
  2. Cook on low for 8 hours, or until chicken pieces reach an internal temperature of 170°F.
  3. If you like, add optional toppings before serving.

Recipe notes:

  • Cauliflower: Frozen florets can be used in place of fresh. If using fresh, chop the whole head of cauliflower, portion what’s needed for the recipe, and seal and store the rest in the refrigerator for up to 3 days to use in other meals.
  • Flavor boost: Consider adding other spices like coriander, cayenne pepper, smoked paprika, or dried oregano.
  • More nutrition and fiber: Add extra nonstarchy veggies like broccoli, spinach, or chopped carrots.
