Recipe: Pineapple Clove Turkey over a Bed of Mashed Potatoes


Believe it or not, turkeys can taste delicious with pineapple, just like ham! It is a little bit different but adds a surprising and sweet addition to your table! The best combo is sticking the pineapple all over the turkey with cloves and letting it permeate for 3 hours in the fridge.

Next, boil potatoes (medium size 1-2 per person/yukon gold or russet) and then mash them with a little butter, salt to taste, black pepper and coconut milk. Do this step last and minutes before you place the turkey on top and serve so the potatoes are fresh and hot for your meal!

Cook your turkey whether you do a full turkey (follow holiday baking/cooking guidelines) or thick slices. Pour any extra pineapple juice over your turkey to make moist. When turkey is done set aside and pile a thick 2 inch layer of mashed potatoes on platter, then place turkey right on top and let the juices combine!
