Recipe: Heart Healthy Valentine’s Day Breakfast


Celebrating Valentine’s Day with a romantic breakfast does not mean you have to sacrifice your healthy lifestyle. With simple alterations to traditional recipes you can easily celebrate the day and enjoy a heart-healthy breakfast.

Oatmeal pancakes with fresh fruit topping-- Oats are a heart-healthy super food that reduces cholesterol. Replacing processed flour or packaged mixes in your pancakes gives a healthy boost of fiber and protein without sacrificing flavor. Use a cookie cutter to shape pancakes into hearts or other festive, fun shapes. Replace sugar-laden syrup with a healthy dose of fresh berries or fruit of your choice!

Recipe:

  • 2 bananas
  • 2 eggs
  • ½ cup rolled oats
  • ½ teaspoon baking powder
  • pinch of salt
  • fresh fruit of your choice, to serve

Instructions:

  • In a blender, combine the peeled banana, eggs, oats, baking powder and salt.
  • Blend until the mixture is smooth
  • Heat a non-stick frying pan (or use spray) over medium heat.
  • Fry spoonfuls of the batter until golden brown on both sides.
